Not only is it important to us that we satisfy every palate. We also invest heavily in sustainable food and rely only on meat from animal welfare. Because we value our guests. And because we believe that when it comes to “cheap” food, we all end up paying. Humans and animals and the environment.
What our chef Florian Pelz works with comes almost exclusively from the region, often even directly from the neighboring farms. Meat and fish comes from a regional farm, game from the Berchtesgaden National Park, our Rehluga caviar from the Königssee. We even have two farmers breed the endangered Black Alpine Pig especially for us. And the spring water that we give you for free is one of the best drinking water in Germany.
